What’s in a Kiwi Lime Pie Parfait?
Yogurt: the main component of this Kiwi Lime Pie Parfait is yogurt. It’s the perfect creamy base, with loads of probiotics. I went dairy free while breastfeeding, so I really like using almond yogurt (plain or vanilla). It’s crucial to use a thick yogurt so that they layers can form nicely in your glass. If you can have dairy, a vanilla or plain Greek yogurt is delicious.
Kiwi: the perfect gut-healthy compliment to this pie parfait, which also adds a boost of Vitamin C.
Lime juice and zest: lime adds the perfect amount of summery tang to this dessert, and actually adds health benefits for lungs, joints, blood vessels and cells due to the hesperidin in the zest.
Graham Crackers: these are my family’s favorite!
Whipped Cream: easily make from scratch, or if using store-bought, the So Delicious brand lives up to its name! You can use regular whipped cream, but coconut whipped cream really bumps this up a notch and pairs perfectly with the tropical flavor profile of this dessert.
